Sauteed Green Beans with Shallots

Ingredients

See Chef West's recipe for Grilled Chicken Breast with Tangerine Honey and Chipotle Glaze!  Serve along with his Olive Oil Crushed Potatoes~

  • 1 cup green beans such as blue lake beans
  • Water, to cook beans
  • 2 Tbs Californian Olive Ranch EVOO
  • 1 Tbs Shallots
  • Kosher salt
  • Black pepper, to taste

Directions

  1. Place a 2 quart sauce pan on tOlivehe stove, bring to a boil, add the cleaned green beans, cook for 1-2 minutes to soften and blanch the beans.
  2. Remove the beans from the water and place them in a bowl of ice water to shock them or stop the cooking.
  3. When ready to serve, in a large skillet, heat the oil, add the shallots and the beans, sauté over medium high heat turning often. 
  4. Once they are hot, add salt and pepper to taste. 
  5. Remove from the pan and serve immediately.
