This particular Caesar – from the California Avocado Commission – includes olive oil-toasted croutons, ripe avocado (naturally), romaine lettuce, and cherry tomatoes. It comes together with an avocado-based dressing.
The dressing – made in a blender or food processor – combines fresh avocado, garlic, fresh lemon juice, red wine vinegar, extra virgin olive oil, Worcestershire sauce, and shredded Parmesan. Large avocados are recommended for this recipe, which was created by Gaby Dalkin of What’s Gaby Cooking. A large avocado averages about 8 ounces. If you’re using smaller or larger size avocados, adjust the quantity accordingly.
