We’re always on the lookout for healthful dishes, particularly now that it’s the start of the New Year. Among other ingredients, we're huge fans of whole grains – a staple of the Mediterranean diet. This Asian-style dish - courtesy of food blogger Milisa Armstrong and our friends Bob's Red Mill Natural Foods - combines two other Mediterranean diet staples: vegetables and almonds. (Click here to see the recipe.)“This (is) a fabulous side dish that would pair quite nicely with a grilled chicken breast, fish or even a steak,” Armstrong, who pens the Miss in the Kitchen blog, says. “This was so hearty that it could actually be a meal, especially if you throw in a little meat.” (Or just keep it vegetarian!)The whole grains that form the basis of the dish are Bob’s Red Mill Whole Grande Grains, which includes whole grain wheat, brown rice, oats, rye, barley, buckwheat, and sesame seeds.The recipe also calls for broth, mushrooms, water chestnuts, orange juice, stir-fry vegetables, and sliced almonds.
