Define extra virgin olive oil, said Foshee. Bottles from Europe, he noted, aren't necessarily true EVOO.That's true.Not all "extra virgin olive oil" sold in the United States is indeed the real thing. Even certain oils imported from some of the biggest olive growing countries don’t have to adhere to international standards when sold here.
California is the only U.S. state that has adopted the international standards that define true extra virgin olive oil. Those rigid standards – based on numerous laboratory tests – were established by the International Olive Oil Council
