We like to eat a meatless dinner at least once a week. Plant-based foods – a central part of the Mediterranean diet – are good for you. And they taste good. That means we’re always looking for ways to include veggies, grains, beans, nuts and, of course, extra virgin olive oil in our meals. The chick pea and tomato curry featured here is just the kind of meal I’m talking about. (Click here to see the recipe.) It’s a meatless, flavor-packed dish of beans, fire-roasted tomatoes and curry. Plus, it can be on your dinner table in 30 minutes. So what’s not to love!
