Food blogger Janelle Maiocco of TalkOfTomatoes.com keeps a list of recipes which, in her words, “take little brainpower, use minimal energy and are often quick to assemble.” These buttermilk Parmesan chicken tenders are on that list. (Click here to see the recipe.)
“In fact, as I write this, my 11 year old son is in the kitchen making this,” Maiocco notes in one of her blog posts.
Prior to baking the chicken, Maiocco soaks the tenders in buttermilk to keep them moist. They’re then dredged in grated Parmesan cheese and bread crumbs, placed on a baking sheet, and drizzled with extra virgin olive oil. Our Everyday Fresh oil would be perfect.
The tenders are baked in a 500 degree Fahrenheit oven for 12 minutes. (Click here to see the recipe.) And that’s it!
Being the olive oil lover that I am, I’d give my tenders a finishing drizzle with our peppery Miller’s Blend. It would complement the tang of the Parmesan. Any of our oils, however, would be just fine. Pick your favorite!
