Olive Oil Madelines

  • 3 eggs
  • 473g sugar
  • 340g milk
  • 435 cake flour
  • 9g baking powder
  • 6g salt
  • 283g California Olive Ranch extra virgin olive oil
  • zest of 1 lemon


  1. Beat eggs and sugar until creamy, add milk and combine, add flour baking powder and salt. Mix 2 minutes the drizzle in California Olive Ranch extra virgin olive oil till combined. Let rest 12 hrs.
  2. Pipe into Madeline molds coated with butter and bake at 350 degrees for 6 minutes.
  3. Immediately take them out of the mold and using a syringe injector fill them with a squirt of mild fruity California Olive Ranch extra virgin olive oil and dust with powdered sugar.
