The flag may wave red, white, and blue on July 4th, but the real color of summer is green: green grass, green trees, and a plethora of healthy, delicious summertime greens – cucumbers, avocados, artichokes, herbs, salad, and much more.

Cool, crisp cucumbers are a great reason to give the blender or food processor a whirl. This complex green gazpacho is like a salad in a glass: cucumbers, green bell peppers, parsley, and cilantro blend with bread for body and quality olive oil for a silky smooth summertime starter. Also on point – toast points, that is – is this whipped feta spread topped with seasoned marinated cukes. Heavenly.

Rich avocados make a satisfying meal or shared appetizer, and olive oil enhances its rich and flavorful flesh. Bring your avocado toast up a notch with seasoned spicy cucumbers, a driz of high-quality olive oil, and a schmear of tahini – the results are amazing. And, up your guacamole game with a few ideas from Tyler Florence: chopped onion, Serrano chilis, fresh cilantro, EVOO, and a whole lot of lime juice. Your chips will never be the same.
