Balsamic Chicken
Ingredients
- 4 lbs organic bone-in, skin-on chicken thighs
- 2 tbsp unsalted butter
- ¼ c California Olive Ranch olive oil
- ¼ c Lucini balsamic vinegar
- 2 sprig fresh rosemary
- zest of 1 lemon
Instructions
- Allow chicken to come to room temperature and season with salt and pepper thoroughly
- Preheat oven to 400 degrees
- Bring a cast iron skillet to high heat with olive oil
- Sear thighs skin down on skillet until heavily browned (about 5 minutes)
- Turn thighs right side up and introduce the butter
- Apply rosemary
- Insert chicken into oven and roast until internal temperature reaches 160 degrees
- Remove chicken and apply balsamic vinegar to deglaze skillet and chicken (use more than noted if seems necessary)
- Garnish chicken with lemon zest and serve
