Cherry, Vanilla, Walnut Muffins

Aside from being some of the healthiest, most delicious muffins ever, these are

also so versatile. Cherry, walnuts and vanilla mix perfectly here, but if you prefer a

different nut or fruit this muffin base can be the base for all of your favorites.

Gluten free, dairy free and sweetened only with pure maple syrup, not only do

these taste so good, but they’ll also make you feel good. Perfect to make the night

before for breakfast on the go or a satisfying and scrumptious snack anytime.

Ingredients

Dry Ingredients:

  • 2 cups almond flour
  • 2/3 cup tapioca flour
  • 1/4 cup coconut flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups roughly chopped cherries (fresh or frozen)
  • 3/4 cup chopped walnuts

Wet Ingredients:

  • 2 eggs, room temperature
  • 1/3 cup milk of your choice
  • 2/3 cup maple syrup
  • 1/4 cup California Olive Ranch Avocado Oil Blend
  • 1/2 tablespoon apple cider vinegar
  • 1 tablespoon vanilla extract

Instructions

  1. Preheat oven to 350F
  2. Line muffin pan with baking cups
  3. Add all dry ingredients, besides cherries and walnuts, to a mixing bowl and whisk together
  4. Add all wet ingredients to another mixing bowl and whisk together
  5. Add wet ingredients to dry ingredients and mix well, until a batter forms
  6. Fold in cherries and walnuts
  7. Evenly divide batter into 12 muffin cups
  8. Bake muffins for about 30 minutes, until a toothpick inserted comes out clean
