Pappa al Pomodoro (Tuscan Tomato Bread Soup)

Pappa al pomodoro is a thick, Tuscan bread soup that transforms stale or leftover bread into a delicious and hearty soup, perfect for the fall or winter months. That makes this the perfect recipe to make to bring the taste of fresh tomatoes into your home year-round.
This recipe calls for our Organic Rustic Tomato Basil Sauce, but any of our sauces would make an excellent base.
Recipe for Lucini Italia by The G & M Kitchen
Ingredients:
- 1/2 onion - finely chopped
- 1 clove garlic - minced
- 1 jar Lucini Organic Rustic Tomato Basil Sauce
- A pinch of red pepper flakes
- 4 cups water
- ½ of a 1 pound loaf of day-old Tuscan bread - sliced and cut into 1/2 cubes
- Add 1 tablespoon of Lucini Premium Select Extra Virgin Olive Oil to a large soup pot and sauté the onion until it is translucent
- Add the jar of Lucini Organic Rustic Tomato Basil Sauce and a pinch of red pepper flakes
- Cook until warm, allowing all of the flavors to meld together (about 10 minutes)
- Add 4 cups of water and stir to combine
- Add in the bread in quarter batches and stir to combine
- Let the bread completely dissolve into the soup, creating a porridge like consistency
- Finish with a drizzle of extra virgin olive oil
