Rainbow Veggie Roast With Garlic Yogurt Sauce
If you’re looking for a delicious snack or side dish, look no further. This recipe is a
great way to get some veggies in that’ll also keep the cozy vibes going. With so
much flavor and a perfect roast thanks to California Olive Ranch’s Garlic Olive Oil
this rainbow veggie dish tastes even better than it looks. Pair it with the garlicky
yogurt sauce for extra flavor and protein, and go ahead and double dip, no one’s
watching.
Ingredients
- 1 large sweet potato
- 3 purple carrots
- 1 yellow carrot
- 1/2 an onion - thinly sliced
- 1 small head of broccoli
- 1 red bell pepper
- 2 cloves garlic, very finely minced
- 3 tablespoons California Olive Ranch Garlic Olive Oil
- 1 teaspoon garlic and herb powder
- 1 tablespoon honey
- 1/2 teaspoon salt
- Pinch of pepper
- 1/4 cup roughly chopped pistachios
- 1/2 cup plain yogurt
Instructions
- Preheat oven to 350F.
- Slice and chop all of your veggies and arrange them on your baking sheet.
- In a small bowl, whisk together California Olive Ranch Garlic Olive Oil, garlic herb powder, salt and honey.
- Evenly drizzle your oil mixture over the veggies an place in the oven.
- Let veggies roast for 35-40 minutes until cooked through and slightly caramelizing/crisping.
- For yogurt sauce- mix together yogurt, finely minced garlic, and a pinch of salt in a small bowl.
- When veggies are done cooking, top with chopped pistachios and black pepper.
