Snap pea, Toasted Sesame, Arugula Salad
Craving something fresh but tired of the same old salads? This recipe brings exciting new flavors and combinations. Fresh, crunchy snap peas, nutty toasted sesame seed oil, sweet honey and creamy parmesan. This may just be your new favorite go-to salad to bring to the table.
Ingredients
For Salad
3 cups fresh arugula
1 cup snap peas sliced in half vertically
1/2 green apple, shaved
Shaved parmesan to top
For Dressing
1 teaspoon coconut aminos or soy sauce
1 teaspoon white vinegar
1 teaspoon toasted sesame seed oil
1 teaspoon California Olive Ranch Miller’s Blend Reserve
For Honey Toasted Cashews
1/3 cup cashews
1 tablespoon honey
1/2 teaspoon toasted sesame oil
1/2 teaspoon coconut aminos or soy sauce
Dash of garlic powder
Dash of salt
Instructions
1. In a small skillet, over medium heat add 1/2 teaspoon toasted sesame oil and let warm
2. Next add the rest of the ingredients for the honey toasted cashews (cashews, honey, coconut aminos, garlic powder and salt)
3. Stir well then let cashews cook until honey becomes caramel like and is bubbling slowly- keep watch not to burn- about 5 minutes
4. Meanwhile, add all ingredients for the dressing and whisk well
5. Add fresh arugula, shaved green apple and sliced snap peas to a large salad bowl or plate
6. Top with freshly shaved parmesan cheese, honey cashews after letting them cool slightly, and dressing
