Strawberry Olive Oil Mousse

Fresh, sweet, creamy and ready in 5 minutes. This may just be the easiest dessert

you ever make.

A double layer strawberry mousse that will hit the sweet spot and impress with

minimal effort and only 4 ingredients. Arbequina with its hints of fruit bring a bright

and refreshing twist on this classic and beloved dessert.

Ingredients

  • 3/4 a pound of strawberries, plus a few more for topping
  • 1/2 cup cane sugar
  • 1 and 1/3 cup heavy whipping cream
  • 2 tablespoons California Olive Ranch Arbequina EVOO, plus more for drizzling

Instructions

  1. To a food processor or high powered blender, add strawberries, sugar and 2 tablespoons of California Olive Ranch Arbequina EVOO.
  2. Blend on high for 3 minutes until smooth in consistency.
  3. To the bowl of a stand mixer, add 1 and 1/3 cup of heavy whipping cream and whip on high up stiff peaks form.
  4. To the whipped cream, add half of the strawberry puree, reserving the other half, mix well.
  5. Refrigerate mousse until immediately before serving.
  6. Scoop 1 tablespoon of reserved strawberry puree into the bottom of each serving glass and top with mousse when ready to serve.
  7. Drizzle more California Olive Ranch Arbequina EVOO over top of mousse before serving.
