Winter Citrus Salad
If you’re feeling a touch of the winter blues, try adding in a gorgeous pop of color
with this orange, pink, and green colored salad.
Citrus is in season right now, which means its flavors are absolutely peaking. And
instead of pigeon- holing this juicy fruit family into the snack and dessert arena,
try out this sweet and savory, juicy and fresh salad. So easy to make and easy on
the eyes, this salad is sure to bring you some joy, and a delicious lunch, this
season.
Ingredients
- 2 Cara Cara or Blood Oranges, peeled and sliced
- 1 large Navel Orange, peeled and sliced
- 1 large grapefruit, peeled and sliced
- 1 cup Arugula
- 1/4 cup red Onion, very thinly sliced
- 1 ripe avocado
- 1/4 cup Walnuts, roughly chopped
- 5 tablespoons California Olive Ranch Balsamic Vinaigrette
Instructions
- Peel and slice all oranges and grapefruit into 1/4 inch thick rounds
- Lay arugula on large salad plate
- Lay sliced citrus and onions on top of arugula
- Top salad with sliced avocado and walnuts
- Drizzle citrus salad with California Olive Ranch Balsamic Vinaigrette and serve immediately
